Coat the bottom of a frying pan with olive oil. Saute pepper and onion until translucent. Add spinach and toss until just wilted. Set aside.
In a separate bowl, mix eggs and yoghurt.
Coat a pie pan with a thin coating of olive oil. Swirl almond crumbs around the pan until it forms a nice, uniform coating.
Place the vegetable mix in the pie pan. Add grated cheddar, followed by egg mixture.
Bake at 375°F for about a 45 – 50 mins or until a knife inserted comes out clean. (Recipe♦442)
