1 clovegarlic, minced
3 tablespoonsfresh lime juice
2 tablespoonsfresh orange juice
2 tablespoonsfinely chopped shallot
1 tablespoonhoney (more to taste or substitute stevia for a low-carb version)
3⁄4 teaspoonstoasted, finely ground cumin seeds
1⁄4 cupextra virgin olive oil
1⁄4 teaspoonKosher salt (more to taste)
Mash the garlic to a paste with the Kosher salt.
In a medium bowl, whisk the garlic paste with the lime and orange juices, shallot, honey/stevia, and toasted ground cumin. Slowly add the oil in a thin stream, whisking until well blended.
Season to taste with black pepper and more salt and sweetener if you like. (Recipe♦294)
