Use a food processor to shred the raw fruit/vegetables. Toss the shredded fruit/vegetables in a large bowl to combine well.
Make the dressing by measuring all the ingredients into a jar with a fitted lid. Cover and shake vigorously.
Dress the veggie slaw, taste and adjust seasoning by adding more salt or pepper. Let the slaw sit in the fridge for about an hour, then stir and taste again. When it's time to serve, garnish with fresh mint. (Recipe♦121)
