Wild Rice Salad with Balsamic Dressing

Ingredients

1 package
wild rice (cooked according to directions)
1⁄4 cup
chopped red onion
1
fresh herbs (chives, parsley, garlic chives or cilantro)
1⁄2 cup
walnuts (chopped)
1
yellow pepper (chopped)
4 tablespoons
olive oil
1 tablespoon
balsamic vinegar (sweetens, add more to taste)
1 dash
salt

Instructions

Cook rice and let cool. Combine with onion, herbs, walnuts and yellow pepper. Blend the oil, vinegar, and salt, and toss with the salad.  (Recipe #899)
