Salmon Quiche

Ingredients

 
olive oil (to coat pie plate)
1⁄4 cup
almond meal (to coat pie plate)
1 pound
salmon fillet
5
eggs
2⁄3 cups
half and half
1 dash
salt
4 ounces
crumbled goat cheese

Additional Notes

To use fewer egg yolks, you can replace 5 whole eggs with 3 eggs and 4 egg whites.

Instructions

Coat a 9" pie plate with oil, then dust with almond meal. Chop salmon into 1/4" pieces and place in pie plate. Sprinkle goat cheese over salmon. 

Mix eggs, half and half, salt and pour over salmon and cheese. Bake at 375 degrees for about 45 minutes, until a knife comes out clean.  (Recipe #747)
