Salmon & Egg Salad

Ingredients

1 can
Alaskan red salmon, flaked (large can)
4
hard-boiled eggs (peeled and mashed)
4
stalks celery (minced)
1⁄4 cup
red onion (minced)
3 tablespoons
fresh herbs such as parsley, chives and thyme (to taste)
1
lemon (juiced)
1
olive oil
 
salt and cracked pepper
1 dash
hot pepper sauce
Yields:
large servings

Instructions

Combine the salmon, eggs, celery, red onion and herbs. Whisk the lemon juice, olive oil, salt and cracked pepper together. Add hot sauce, if desired. Blend and taste to see if it wants a little more oil.  (Recipe #744)
