Rubbed Kale with Honey Mustard Vinaigrette

Ingredients

2 bunches
kale
1⁄3 cup
olive oil (plus more for rubbing)
1 teaspoon
sea salt (half for rubbing)
2 tablespoons
cider vinegar
1 tablespoon
brown mustard
1 clove
garlic
2 teaspoons
honey

Instructions

Wash and drain the kale. Remove spine from kale leaves. Tear the leaves into bite-size pieces and massage them with a drizzle of olive oil and 1/2 teaspoon of salt (or to taste). Taste it - add more salt if desired or if too salty, don't salt the dressing.

Blend the olive oil, vinegar, mustard, garlic, honey and 1/4 teaspoon salt (to start) in a blender. Adjust taste and add to the massaged kale.  (Recipe #739)
