Quinoa Tabbouleh 1

Ingredients

2 cups
quinoa (uncooked)
1
lemon (juiced)
 
olive oil (equal amount to lemon juice)
4 drops
liquid stevia
1⁄4 teaspoon
Celtic sea salt
1 package
watercress
1⁄3 bunch
dill
1⁄3 bunch
parsley
1
mint
2⁄3 cups
chopped walnuts
1⁄4 cup
minced red onion
Yields:
small servings

Instructions

Cook quinoa according to directions on package. Whisk together the olive oil, lemon juice, stevia and salt, and set aside. Chop the watercress and herbs, and combine with the nuts and onion. Toss salad with dressing, and serve.  (Recipe #673)
