Puerto Rican Beef

Ingredients

1 pound
grass fed ground beef
1
onion (sliced)
1 1⁄2
bell peppers (mixed green, red and yellow, sliced)
3 tablespoons
olive oil
1⁄2 tablespoon
ground cumin
1 teaspoon
ground coriander
1⁄2 tablespoon
turmeric powder
1 tablespoon
dried oregano
1 pinch
saffron threads (optional)
 
sea salt and pepper (to taste)
1 bunch
kale (chopped)
1⁄2 cup
pimento stuffed green olives (coarsely chopped)
3
sweet potatoes (cooked and mashed)

avocado

Instructions

Heat a large skillet over medium high heat. Brown the ground beef. Add peppers, onions, and olive oil and saute until the onions and peppers are tender.  Add all the spices and mix well. Add kale and green olives, continue cooking stirring often until the kale is tender, about 4-5 minutes. Serve over mashed sweet potatoes garnished with sliced avocado.  (Recipe #653)
