Peel orange skins lightly with a vegetable peeler, taking care not to include much pith (white part). Strips will be used for garnish.
Juice the orange into a pitcher. Add grated ginger, pomegranate juice, and sparkling water. Add orange strips and pomegranate arils to each glass, then pour in the mocktail. You may want to pour through a strainer to remove the ginger bits.
Note: The drink develops more flavor the longer it sits with the ginger in it. (Recipe #640)
