Paleo Grass-fed Beef or Lamb Saute Hash

Ingredients

2 tablespoons
coconut oil (to coat the pan)
1 teaspoon
salt
1 tablespoon
ras el hanout or curry powder (optional)
1
onion (diced)
3 cloves
garlic (minced)
1
red pepper (diced)
1 pound
grass-fed ground beef or lamb
4 cups
low starch veggies (shredded greens, cabbage, diced summer squash, baby spinach)
 
water or coconut milk (as needed to steam)
 
lemon juice, salt, pepper (to taste)

Instructions

Heat the oil. Add salt and any spices you're using. Stir constantly for half a minute, being careful not to let the spices get smoky. Place onion in the pan and turn down the heat and cook at least 10 minutes, stirring occasionally. Add garlic and red pepper and continue to cook. 

Add beef or lamb and brown the meat. Add the vegetables and a few tablespoons of water or coconut milk, just enough to steam. Cover and cook 10-15 minutes until vegetables are soft, adding a little water or coconut milk as needed. Flavor balance with a little lemon juice, salt and black pepper. 

 

                                                                                                                                  Variations: You can replace the beef or lamb with ground pork, chicken, or turkey. You can modify the flavor by using Italian, Middle Eastern, or Curry spice mixes. Vegetarian/Vegan option: omit the meat and add cooked beans, chickpeas, or lentils.
