Paleo Almond Chicken Fingers

Ingredients

1 pound
boneless, skinless chicken breast
1 cup
almond meal
1 tablespoon
paprika
1⁄2 teaspoon
garlic powder
1 teaspoon
ground cumin
1 teaspoon
cayenne pepper
1 teaspoon
black pepper
1 teaspoon
sea salt

eggs (lightly beaten)
 
olive oil cooking spray

Instructions

Preheat oven to 375 degrees. Slice chicken breasts into long strips, 1-2 inches wide.

Mix together almond meal, paprika, garlic, cumin, cayenne, pepper, and salt.

Dredge each piece of chicken in egg and then coat with almond spice mixture. Place pieces on a cookie sheet greased with cooking spray. Bake for 20-25 minutes, until golden.  (Recipe #602)
