One Facilitator's Favorite Breakfast

Ingredients

eggs
1
baby cucumber
1
tomato
1⁄4 cup
crumbled feta cheese
 
extra virgin olive oil (enough for drizzling)
 
balsamic vinegar (enough for drizzling)
 
salt and pepper (to taste)
 
fresh parsley

Instructions

Cook the two eggs by your favorite method, although cooking them over easy or hard in a frying pan works well for this recipe. 

While the eggs are cooking, dice the cucumber and tomato into small pieces. You can also chop the parsley and set aside.

When the eggs are cooked, transfer them to a plate. Top with crumbled feta cheese, diced cucumber and tomato. Finish it off with a drizzle of olive oil and vinegar, and a sprinkling of salt and pepper. Garnish with the parsley.

Note: There are endless variations to this. You can swap in different raw vegetables, use various fresh herbs for garnish. You can add avocado chunks. You can use goat cheese instead of feta. Experiment with your favorite ingredients and see which combinations work well.   (Recipe #597)
