Nut-Free Paleo Banana Pumpkin Cassava Bread

Nut-free paleo breads are hard to find. This mindly-sweet spice bread is filling and holds its shape well!

Ingredients

ripe bananas (mashed)
1 cup
pumpkin
4
eggs
1 teaspoon
vanilla
1⁄4 cup
applesauce
1⁄4 cup
honey or maple syrup (can omit for Whole30)
1 teaspoon
salt
2 teaspoons
cinnamon
1⁄2 teaspoon
ground ginger
1⁄2 teaspoon
ground clove
1 1⁄2 cup
cassava flour
1 cup
tapioca flour (AKA tapioca starch)
1 teaspoon
baking soda
 
coconut oil (to grease pan)

Instructions

Preheat oven to 350 F, and grease glass or metal loaf pan with coconut oil. Combine all dry ingredients and all wet ingredients in two separate bowls, then stir together. 

Bake for 50-60 minutes or until toothpick pulls out clean.  (Recipe #596)
