Mexican “Rice”

Ingredients

head cauliflower (proccesed in small batches to the size of rice grains)

grape tomatoes (quartered)
4
radishes (diced fine)
1
red bell pepper (diced fine)
1 bunch
cilantro (stemmed and chopped)

lime (juiced)
1 tablespoon
onion or scallion (minced)

olive oil
1⁄2 teaspoon
cumin
1
avocado (to top; this ingredient is optional)
1
jalapeno (minced, optional garnish)
 
hot sauce (optional garnish)
Yields:
large servings

Instructions

Combine all the ingredients and toss with lime juice and olive oil. Taste for salt. Top with diced avocado. Garnish with jalapeno and hot sauce.  (Recipe #573)
