Lemon Macadamia Energy Bites

  1. Enjoy these bites straight from the refrigerator or freezer for nourishing, satiating fats instead of reaching for a high-carb "pick-me-up!"


6 ounces
coconut oil
2 ounces
cocoa butter (or sub 2 oz more coconut oil)
2 ounces
coconut cream (from the top of a can of coconut milk)
3 tablespoons
almond flour
3 tablespoons
coconut flour
medium lemon, juiced and zested
liquid stevia (or maple syrup to taste)
1⁄2 cup
shredded coconut
1⁄2 cup
macadamia nuts
sea salt


In a small pan over low heat, melt coconut oil, coconut cream, and cocoa butter (if using). In your blender, combine melted mixture with flours, vanilla, lemon juice/zest, and stevia adding drops to taste (try 10 and taste, then can increase) or sub for maple syrup to taste, starting with 2 tablespoons. Add shredded coconut and macadamia nuts. Pulse a few times to combine and lightly chop. 

Portion into bite-sized balls or press into a silicone mold and sprinkle with sea salt. Freeze until firm. Enjoy frozen or refrigerated.  (Recipe #530)
