6tomatillos (peeled and boiled, then iced)
1small red onion (finely chopped)
2 clovesgarlic (minced)
1jalapeno pepper (minced)
1⁄2 cupchopped fresh cilantro
1⁄4 cupchopped fresh spearmint
Dice the chilled tomatillos and capture their juices. Combine with the next six ingredients.
Blend the third avocado with the lime juice and captured juices from the tomatillos, and combine this dressing with the above mixture. (Recipe #526)
