This is Morocco's most common seasoning used to flavor soups, stews, and tagines. It is also used as a rub on poultry and lamb.

1 tablespoonground ginger
1 tablespoonblack pepper (freshly ground)
2 teaspoonsground turmeric
1 1⁄2 teaspoonground cinnamon
1 teaspoonground nutmeg
Combine all spices. It will keep stored in an airtight container for about a month. Makes about ¼ cup. (Recipe♦520)
