Cucumber Salad with Red Onion

Ingredients

3
large cucumbers
1⁄2 cup
paper-thin sliced red onion
3 tablespoons
rice vinegar
1 pinch
salt
 
agave nectar (or 10-20 drops stevia for low carb version)

Instructions

Thinly slice the cucumbers on a diagonal, and toss with the sliced red onion. Set aside. 

Blend the rice vinegar, salt, and a drizzle of agave nectar if using. Toss with the cucumbers and onions, and serve.  (Recipeā™¦340)
