Have you tried cacao nibs? A crunchy, rich whole food alternative to chocolate!
In a medium bowl, combine almond butter, coconut oil, cacao nibs, and vanilla. Mix well. Cover and refrigerate 30-40 minutes or until firm enough to handle. Place coconut in a small dish. Using a 1 tablespoon measuring spoon, scoop the mixture into 8 portions and drop onto the coconut. Working quickly, roll into balls. Refrigerate for 10 minutes before eating.
