Chard, Cabbage & Arame Seaweed Salad

Ingredients

1⁄2 package
arame sea vegetable
1 bunch
red swiss chard (sliced into ribbons)
1
head of white cabbage (shredded in food processor)
1⁄2 cup
olive oil
1 tablespoon
toasted sesame oil (plus more for drizzling)
1⁄2 cup
rice vinegar (plus more for drizzling)
1
lemon (juiced)
2 cloves
garlic
1
piece of ginger (chopped)
 
salt and pepper (to taste)

Instructions

Wash and soak the arame, then cook according to package instructions. Drain. While still hot, drizzle with toasted sesame oil and rice vinegar, and toss. Combine arame with chard and cabbage.

In a separate bowl blend remaining ingredients to make the dressing. Fold into the salad, and serve.  (Recipe♦251)
