Chard & Apple Salad

Chard is a hardy green. We've harvested fall chard from our New Jersey garden as late as January. The hardiness of the chard compliments the tartness of the apple and lemon vinaigrette.

Ingredients

2 bunches
chard (green or rainbow)
2
apples (chopped into bite-size pieces)
4
stalks celery (chopped, optional)
1⁄4 cup
walnuts or almonds (optional)
1⁄4 cup
raisins or dried cranberries
 
citrus vinaigrette (see recipe link below)

Instructions

Rinse and wash the chard. Strip the chard off the stems and chop the leaves into bite-sized pieces. Finely chop the stems and toss with leaves.

Combine all ingedients, toss with vinaigrette and serve. (Recipe♦250)
