Breakfast Challenge Scrambled Eggs or Tofu Scramble

1 teaspoon
coconut, olive oil or butter (or enough to coat the pan)
1⁄2 cup
chopped vegetables (onion, leeks, peppers, mushrooms, greens, tomato, or whatever you have on hand)
eggs (2 - 3 as desired or 3/4 cups firm tofu crumbled)
1 tablespoon
water or milk
1 tablespoon
fresh chopped herbs (if you have them)
1 pinch
seasonings of your choice (herbs de Provence, chili powder, curry, turmeric, ets. )
salt and pepper (to taste)


Heat oil in a small pan over medium heat. Add vegetables and saute for 3 mins. Crack eggs in a bowl. Whisk eggs with water, salt and pepper and pour over eggs.
