Anne’s Marinated Cucumber Salad

Ingredients

 
stevia to taste (10 drops or so)
6 tablespoons
white balsamic vinegar
4 tablespoons
olive oil
1 teaspoon
salt
1
English hothouse cucumber (sliced)
2
carrots (peeled and shredded)
2
red bell peppers (thinly sliced)
1
sweet onion (thinly sliced)

Instructions

Add stevia, vinegar, oil and salt to a large jar and shake until well mixed. Combine the prepared cucumber, carrots, peppers and onion. Pour dressing mixture over the vegetables. 

Leave salad (covered) at room temperature for 2 hours, then marinate in the refrigerator overnight. Serve (the next day) and enjoy.   (Recipe♦123)
